Shuwa is a typical Omani delicacy prepared only on very special occasions. Eid is probably the most common occasion hence the meat festival! I don’t usually eat red meat and avoid it but shuwa is very good and its made very rarely that I cant help not having some.
The method of preparing shuwa is elaborate. The meat is marinated with red pepper, turmeric, coriander, cumin, cardamom, garlic and vinegar and then wrapped in sacks made of dry banana or palm leaves. These sacks are then thrown into the smoldering oven, which is covered with a lid and sealed so that no smoke escapes. In some villages, the meat is cooked for 24 hours while in others it is believed that meat tastes better after 48 hours.
The meat becomes extremely tender and it is impregnated with spices and herbs before cooking to give it a very distinct taste, usually served with rice.

Here is a recipe I found in the Emirates newspaper. It can be done do at home. I did not taste this recipe yet.
But I have already done another one slowly roasted and marinated lamb of leg (marrocco)and it was very good.
1 leg of lamb
100g Bizar al shuwa
50g garlic ginger paste
25 g chili powder
50ml oil
30 ml vinegar
Sal to taste
Mix all ingredients together and rub over the lamb's leg.
Leave to marinate one hour (to me it would better to let it overnight in the fridge), then cover with alimunium foil.
Place in a pre-heated oven at 160 degres celsius and cook for around 2h and 1/2
Serve hot on a bead of rice decorated with fried onions (home-made) and arabic bread.
Bizar al shuwa can be bought on line in the us.
It's combination of mashed and crushed cumin, coriander, cardamom, cloves, black pepper mixed with garlic, red chili powder, salt and winegar.
